The use of inulin-containing raw materials for the production glucose-fructose syrup helps to significantly reduce amount glucose in it, and increase proportion fructose 97%. purpose research is study process obtaining syrups by bioconversion inulin - containing materials-yacon. Depolymerization fructans carried out enzyme inulinase, which hydrolyzes polymer sucrose. object was yacon root vegetables with an content 17.3 %, preparation inulinase from A. awamori 2250. rational mode hydrothermal treatment tubers is: temperature-85 C, duration-30 minutes, hydromodule-1: 0.5. Rational modes saccharification inuloavamorin P10x: pH 5.5; dosage 14 units per 1 inulin, temperature 50 oC yacon, duration hydrolysis 3.5-4 hours. Thus, we have selected resulting fructose-glucose syrup, a viscous liquid without sediment foreign inclusions. color – yellow light brown, varying intensity, taste sweet no bitterness. smell usually absent, while fruity or caramel flavor allowed. According physical chemical properties has following indicators: dry substances-70-80 %; reducing substances-88-90% terms absolutely matter; fructose-87-89% abs. glucose-1% residual content-1-2% protein substances 6-6. 5% ash 4% abs.dry matter. energy value 315 kcal/100 g.
